In the old town of Koper, in the historic Carli Palace at Župančičeva Street 39, there used to be the Istrska Klet. This restaurant is now permanently closed, but the memory of it among former guests remains alive and, as reviews show, quite shared. The Istrska Klet was conceived as a tribute to traditional Istrian cuisine , a place where visitors were supposed to taste authentic homemade food , prepared with heart. However, the path from promise to reality was not always easy, which in the end probably contributed to its closure.

Praise for authenticity and taste

Many guests left Istrska Klet satisfied. They particularly praised the dishes that truly reflected the soul of Istria. One of the most appreciated dishes was the seafood risotto , which many described as excellent. Other specialties, such as roasted liver, also received praise, as they were said to be prepared "with heart" and evoked memories of old Koper. Guests appreciated the freshness and taste, which testified to the commitment to using quality local ingredients. In its best days, Istrska Klet was a place where one could indulge in the authentic flavors of the region and enjoy the pleasant ambiance, either in the rustically furnished interior or on the outdoor terrace. For many, it was a reliable choice, especially on Sundays, when other restaurants in Koper were closed, with a focus on quick service.

Wine offer as the finishing touch

Of course, good wine is also part of authentic Istrian cuisine. Istrska Klet understood this important connection and offered its guests a selection of local wines that complemented their dishes. A glass of good Refosco or Malvasia rounded off the culinary experience and highlighted the wealth of flavors that this region has to offer. This part of the offer was often mentioned as an important part of the overall experience, which kept guests coming back to this establishment.

Problems that tarnished reputation

Unfortunately, the picture was not always so rosy. Despite the many compliments, serious criticisms began to appear in the reviews, pointing to inconsistencies in both the kitchen and the service. These problems created two completely different faces of Istrian Winery: one that was exciting, and the other that soured the experience.

Inconsistency in the kitchen and high prices

The biggest blow to the reputation was dealt by the dishes that should be the showpiece of local food . The devastating criticism of the goulash, which the guest described as the worst in her life, stands out in particular. According to her, the 12-euro portion consisted of only four small, tough pieces of meat in a tasteless sauce, without a trace of onion or spices. The polenta as a side dish was also said to be leftovers. Such experiences were in complete contrast to the praise for the excellent risotto. There were also complaints about the size of the portions, which were said to be too small for their price. An order of two portions of fried squid with side dishes and a drink for almost 31 euros seemed excessive to some, indicating a discrepancy between price and quality or quantity.

Service problems and unprofessionalism

Another recurring theme in the reviews was the service. Several guests mentioned the waitress, who they described as "a bit strange", with possible difficulties in understanding Slovenian. This led to errors in orders - for example, a guest received jota instead of the vegetable soup he ordered. While some overlooked this as a minor shortcoming, others experienced more serious cases of unprofessionalism. The most negative review mentions the complete lack of interest of the staff, the inability to make regular tea because the machine was supposedly broken, and even swearing coming from the kitchen. The absence of a visible price list and the feeling that the main goal of the staff was to "get the guest drunk" as much as possible created an extremely negative atmosphere that turned customers away.

The Legacy of the Istrian Winery

Today, Istrska Klet is just a memory. Its story is a reminder to all restaurants that a good location and the promise of tradition are not enough for long-term success. Inconsistency was its greatest enemy. While some guests enjoyed a superb culinary experience that transported them to the heart of Istria, others left hungry, disappointed and feeling cheated. The range of ratings from five stars to a single one is testament to the fact that visiting Istrska Klet was not a surefire choice, but a lottery. Koper offers many other options for tasting seafood and Istrian specialties, so the market is unforgiving towards those who fail to maintain consistent quality. The closure of Istrska Klet thus leaves an important lesson about how crucial consistency and professionalism are in the world of hospitality.
