This event, where the Istrian people complained to Charlemagne about the violation of ancient rights, served as the central inspiration. This historical note was reflected not only in the name, but in the entire ambiance – from the modern frescoes depicting the event to the use of natural materials such as stone, wood and glass, which created a sense of time travel.

The Peak of Flavors Under the Leadership of a Renowned Chef

The culinary vision was brought to life by renowned chef Matevž Volk, whose name has become synonymous with quality and innovation. His approach was based on the use of local ingredients , characteristic of different historical periods, and presented through modern techniques.
